My sons, 7 and 9, will be traveling from St Louis to Denver and want to stop somewhere about half way to stay the night. They would like to horseback ride wherever we stop. Any tips? Cities? If not horseback, then something boys would enjoy in the middle of KS?

Enjoyable things for the boys near I-70 in the middle of Kansas:
Fort Riley: Right off I-70, the home of the Big Red One has a lot of free attractions. Museums, historic buildings, historical markers, statues and monuments.
Salina: Zoo at Rolling Hills Wildlife Adventure is a great middle sized zoo. West of Salina and off I-70 about 3 miles.
Hays: The Sternberg Museum of Natural History displays dinosaur and fish fossils from the area and has animated life size recreations that the kids will love. Visible from I-70
Further west there are some great chalk formations on undeveloped range land that would excite them. But they are 15-20 miles off the freeway. Or the boys might like riding a miniature train at the Ellis Railroad Museum.
